Ascend Prime Steak & Sushi has inaugurated lunch service giving guests the chance to build their dining experience from a 3-course prix fixe menu or a curated selection of à la carte choices. Lunch is available Monday-Friday from 11:00am- 2:30pm at the bar, sushi bar and in the main dining room. Reservations may be made at ascendprime.com. Walk-in’s can be accommodated.

The “31 Lives Menu” offers a great value of 3 perfectly portioned courses, many dishes gleaned from the dinner menu. It encompasses a starter (5 choices), main (7 choices) and dessert (3 choices) for $31.  A portion of the proceeds from each menu will support “31 Lives”, a program designed to fund opportunities for aspiring culinarians and contribute professional resources to elevate culinary education in Puget Sound. Diners on a time crunch can anticipate that the special menu will take between 60 to 75 minutes from start to finish.

Individual dishes are comprised of entrée salads- a Caesar with optional wood-fired proteins (free-range chicken, wild-caught salmon, kushiyaki wagyu beef), a vegan tofu beet salad or a white miso seafood chowder (halibut, smoked mussels, sake steamed littleneck clams, butternut squash, compressed celery).

Hearty sandwiches include crispy curry chicken, the Ascend Wagyu burger and the plant-based azuki edamame burger all served with a side of nori malt vinegar dusted frites.

Three noted premium steaks enjoyed at dinner (Meyer prime angus New York strip, prime “dry-aged” ribeye and Mishima Reserve Wagyu filet mignon) will be presented at the mid-day meal. Topped with spring onions, a miso-demi glace and black garlic butter, the steaks are accompanied by a choice of frites or a tofu squash salad (house made tofu, citrus greens, shiso pistachio pesto, preserved walnut).

Sushi fans will find four contemporary rolls along with a robust selection of traditional and contemporary sashimi.  A daily selection of oysters and an omakase sampler of hamachi and salmon sashimi, kinmedai and aji nigiri, akami contemporary style, provide additional tastes from the sea.

Three desserts (Halo, Skyfall, sorbet trio) that look as beautiful as they taste, provide an ideal sweet finish to the afternoon.

Ascend Prime is located on the 31st floor of Lincoln South Tower in Bellevue. It is the  recent project from Ascend Hospitality Group, developers of world-class hospitality and culinary experiences led by Bellevue business and community leaders, Paul and Elaina Herber. Their partner is restaurant visionary Jeffrey Frederick, of Elite Brand Hospitality Group.
