THE MAR·KET | fishmonger & eatery, has announced its grand opening for Wednesday, June 13, debuting downtown Edmonds’ only seafood market featuring fresh fish, fish & chips, and sushi. The restaurant is located at 508 Main Street, near the landmark Edmonds Fountain, and will be open 10am – 9pm daily (opening at 9am on Saturdays during the Edmonds Farmers Market season).
THE MAR·KET is the fourth entity from Feedme Hospitality (Shubert & Mira Ho and Andrew & Ciara Leckie co-owners), joining Salt & Iron, Bar Dojo, and Shooby Doo Catering. THE MAR·KET will offer a variety of fresh fish and seafood by the pound, takeaway items like fish tacos, sushi, lobster rolls, fish & chips, clam chowder, steamed crab, and other fast casual treats. There will be a small indoor seating area, outdoor patio seating, and orders available to-go from a takeout window. Customers will also have the option to have their fish selection cooked on-site for take-home dining. There will also be retail items such as beer, wine, sauces, spices, cookbooks, branded apparel and seasonal specialties.
Serving as Chef de Cuisine at THE MAR·KET is former Salt & Iron lead cook Hans Korompis. Hans grew up in Singapore and moved to the US at the age of 20. After years of working in Tom Douglas Restaurants and running his own Chicken Rice stand, Hans started working at Salt & Iron and quickly became an all-star. Hans brings his unique palate and view on food to THE MAR·KET. He will have an opportunity to showcase fresh seafood from various parts of the world with key influences from Southeast Asia, Central America and the Pacific Northwest. Korompis’ staff includes Salt & Iron sous chef Skyeler Milgate along with Director of Operations for Feedme Hospitality Alex Marek.
“Downtown Edmonds has this wonderful homey feeling to it,” Chef/Owner Shubert Ho says. “When I first saw the space, I didn’t think it was going to have much potential. But then after a few months of thinking about it, the idea of a fishmonger just made sense! How does a coastal community like downtown Edmonds not have a place where you can buy fresh fish, fish tacos and sushi all in the same place!?”
